Tasty Little Dip...

HERE'S A BIT OF HUMMUS WITH A TWIST. JUST AN ADDITION (CURRY) TO MAKE IT ZIPPIER! I myself will be doing some snacking this evening. This may not seem like baseball food, but it's what I intend to feast on as I watch,(from home), what I hope will be the clincher for the New York Yankees to take the pennant. But it's supposed to really rain with a vengeance tonight, doesn't look it now, all sunny and deceptive. So maybe the weather folks will be wrong. I look forward to that possibility. Anyway, I'll be eating little snick-snacks, and perhaps drinking some champagne, no matter what. Nothing wrong with that!
x
CURRIED HUMMUS
X
1 15 OZ. can chick peas/garbanzos, drained
1 clove minced garlic
1 small dried red pepper, crumbled, or sprinkling of red pepper flakes
juice of 1 lemon
1/2 tsp. cumin
1 1/2 tsps. curry powder
6 tbls. olive oil
salt and ground pepper
x
Place chick peas, garlic, pepper flakes, lemon juice, in food processor and blend. Add oil in a slow stream to contents until all is blended smooth. Season with salt and pepper to taste. Makes about 1 1/4 cups.
x
Serve with pita crisps or crudities. Also makes a great sandwich when spread in pita pockets.
Add grilled or fresh vegetables.
