BEST SANDWICH for end of summer....the full ripeness of the figs signal the waning days, but what a way to go..and the sweet, saltiness of prosciutto, a great combination to look forward to..add cheese, could be your choice...you can't make a mistake. This is barely a recipe..it's sort of just eating!
FRESH FIG, PROSCIUTTO, AND CHEESE SANDWICHES
8 slices Italian bread, toasted
4 tsps. Dijon mustard
1 cup baby arugula
2 oz. very thin slices prosciutto
2 oz. swiss, manchego, muenster or mozzarella cheese, or your choice, sliced or shredded
8 fresh figs, cut into thin slices
2 tbls. fig jam
Spread 1 tsp. mustard over 4 slices bread. Place arugula on each bread slice. Place prosciutto, cheese and fig slices on top. Spread 1/2 tsp.jam over remaining 4 bread slices, place on sandwich, slice. Serves 4. Sweet and savory...mmm...mmm. A red wine, maybe a Cabernet, would be nice. Watch the sun go down....
At some point I sort of just eat the figs like they're going out of style.

ReplyDeleteHi Carrie-
ReplyDeleteThe simpler, the better..that's my motto!! Thanks...
A 'meat-and-potatoes' Peep, this would never have occurred to me. But I'm willing to give it a try!
ReplyDeleteWho knows, i might even like eating again!
Hi steveroni-
ReplyDeleteDefinitely good for someone who'd like to try eating again!! Save the potatoes for later..

ReplyDeleteFor me, one of the joys of reading other people’s blogs is to taste, in a virtual sense, some of the delicious food that they describe. I think I will serve this tomorrow, with a glass of wine maybe.
A wonderful romantic dish to serve.
One of the best I have seen so far, perfect combination of being simple and inexpensive but creative.
Joanny
love it!
ReplyDeleteI think I would probably follow your example and just eat the figs, too. I'm a dried fruit type of person: dates, figs, peaches, give me the whole lot. No wonder my teeth have suffered so much throughout the years. :-)
ReplyDeleteGreetings from London.
Hi joanny-
ReplyDeleteI too like to taste everything, virtually! A good way to stay slim..Thanks!
Hi Jingle-
ReplyDeleteThanks...enjoy!!
Greetings to a Cuban-
ReplyDeleteI love the seasonal fruits, rush to eat them, and if the dried are bad for my teeth..well, you can't have everything!! Enjoy!
Scrummy, Lyn! I've got a fig yogurt today. Love figs any how!
ReplyDeleteHi Derrick-
ReplyDeleteI haven't seen a fig yogurt here..but I guess I can make my own! Will be shopping for both today...Thanks...
